Italian Ciabatta Bread/Pain Italien Ciabatta

Recipe, adapted (with some small changes to make it easier for me)  from Susan's Yeastspotting Website

I love Ciabatta bread and we buy it on a regular bases for our sandwich. Before I started making Ciabatta bread, I was really nervous about the dough and how runny it should be. The first time I made this bread, the dough was so runny, got stuck all over my fingers and I had a hard time to shape it . But once baked and out of the oven, it turned out fabulous and it was the best Ciabatta bread I have ever tasted. WELL WORTH THE HARD WORK!

Ingrédients:

  Poolish / Levain


- 600 ml warm water / 600 ml de l'eau tiède

-300 gr white flour / 300 gr de farine blanche

-Pinch of dried yeast  (about 1 gr ) / Un tout petit peu de levure boulangère (environ 1 gr)

Prepare the poolish / Préparer le levain:

Mix water and flour, then add yeast and mix well with your hands. Let it rest for about 10 hours at room temperature / Diluer la farine et l'eau, puis ajouter la levure tout en remuant avec la main. Verser la pâte dans un un contenant, couvrir et laisser lever pendant 10 heures à température ambiante.

After 10 hours. / Après 10 heures.
Ingrédients : Bread / Pain:


-300 gr white flour / 300 gr de farine blanche

- 200 gr fine semolina / 200 gr de semoule très fine

-6 gr dried yeast / 6 gr de levure boulangère sèche

-Some salt / Un peu de sel

-Poolish / Levain

-3 tablespoons olive oil / 3 c à soupe de l'huile d'olive

-1 tablespoon caster sugar / 1 c à soupe de sucre semoule

-Some cold water enough to form a wet and sticky dough / Un peu de l'eau froide  pour former une pâte assez humide et collante.




Method / Préparation:

1-Prepare the poolish / Préparer le levain.

2-I used a mixer with a bread hook to make this bread.  Put the flour, semolina, yeast, sugar, oil, salt and poolish in a mixer and knead for about 10 minutes, adding gradually water.  / J'ai utilisé le robot culinaire pour réaliser ce pain et j'ai mis le crochet pétrisseur. Mélanger farine, semoule, levure, sel, huile, sucre et levain, puis laisser pétrir pendant environ 10 minute, en ajoutant graduellement de l'eau.

3-Place in a large bowl, cover with plastic wrap or a damp tea towel and let rise for about 4 hours. / Placer la pâte dans un grand bol, couvrir avec un film alimentaire ou d'un torchon humide de préférence. Laisser lever pendant 4 heures.

4-Gently deflate the dough and you can feel how the dough can be easily stretched, and becomes elastic and smooth. / Dégaser la pâte délicatement et vous allez remarquer que la pâte est bien élastique et lisse. 
5- At this point you can refrigerate the dough for anywhere from 2 to 24 hours. / Vous pouvez placer la pâte au réfrigérateur pendant 2 heures ou jusqu'a 24 heures.

6-Take the dough out of the refrigerator and let it warm up for about one hour. The dough is still sticky so keep oiling or wetting your fingers as you shape the dough into Ciabatta. Cut the dough into 4 pieces and gently stretch each piece into a rectangle.  I used baking sheet which I put between Ciabattas to form separating walls.  You will need some flour while shaping this bread  to make sure the dough will not stick. / Sortir du réfrigerateur et laisser reposer encore au moins une heure.  La pâte est toujours collante alors vous aurez besoin de huiler ou mouiller vos mains en formant Ciabatta.  Couper la pâte en 4 tranches et confectionner des rectangles et séparer-les pour qu'elles ne collent pas. J'ai mis des batonnets en papier sulfirisé. Il faut prévoir un peu de farine pour les confectionner puisque la pâte est pas mal humide et collante.

7-Lightly cover the dough with heavily oiled plastic wrap or food bag, and allow it to rise for 1 hour. / Couvrir avec un film alimentaire bien huilé et laisser lever pendant 1 heure.

 8-Preheat the oven to 200°C. / Préchauffer le four à 200°C.

9-Sprinkle some flour over the bread.  / Saupoudrer d'un peu de farine.

10-Bake for about 45 minutes to 1 hour or until golden brown.  / Laisser cuire entre 45 à 1 heure ou jusqu'à que le pain soit bien doré.
11-Remove to a rack and let cool / Placer sur une grille et laisser refroidir.

No one makes bread as beautiful as yours. I have not made ciabatta, but have purchased it and loved it. Someday I will try this, for you have done this so beautifully. I have been remiss in visiting with you. I hope all is well with you.

Wow....that's perfect ciabatta. Love to see all the holes in there. This would be great for curry. It would soak up all the beautiful curry sauce.

Il est clair qu'on ne peut pas faire de façonnage mais il doit être excellent.
