Cinnamon Bread / Pain au cannelle

This recipe came out perfect for me even though I made some slight changes (I used semolina flour mixed with white flour since there is no way to find "King Arthur Unbleached All-Purpose Flour" over here and used fresh milk and mashed potatoes instead of potato and milk powder.
I made this Cinnamon Bread a few weeks ago and the result was amazing!  The texture is fine, soft and spongy almost like a nice Brioche. It's slightly sweet, but not too much, and it also smelled great while baking, I couldn't wait to have it for breakfast.  This is also one of the highest rising loaves I've made to date. J'ai mis un peu de semoule fine mélangée avec la farine blanche puisque le type de farine mentionnée dans la recette originale ne se vend pas ici.  J'ai mis tout simplement les patates cuites et écrasées en purée au lieu de patates en poudre et du lait frais au lieu du lait en poudre.  Verdict: Excllent pain à faire et à refaire avec grand plaisir!

Ingredients :

-100 gr fine semolina / 100 gr de semoule très fine

-500 gr white flour / 500 gr de farine blanche

-5 gr active dry yeast / 5 gr de levure boulangère sèche

- 1 1/4 teaspoons salt / 1 1/4 c à thé ou café de sel

-3 tablespoons caster sugar / 3 c à soupe de sucre semoule ou Sanida comme on l'appelle au Maroc

-2 tablespoons of warm water / 2 c à soupe de l'eau tiède

-6 tablespoons unsalted butter, at room temperature / 6 c à soupe de beurre mou non-salé

-60 ml warm fresh milk / 60 ml du lait frais tiède


-3 medium cooked and mashed potatoes  / 3 patates moyennes cuites et écrasées en purée


Filling / Farce:

-
2 tablespoons caster sugar / 2 c à soupe de sucre semoule ou Sanida comme on l'appelle au Maroc

-2 tablespoons white flour / 2 c à soupe de farine blanche

-1 1/2 tablespoons ground cinnamon / 1 1/2 c à soupe de cannelle moulue

-1 egg beaten with 1 teaspoon cold water, to brush on dough / 1 oeuf  légèrement battu avec 1 c à thé ou café  d'eau froide pour badigeonner la pâte

Method / Préparation:


1-Dissolve yeast with 1 teaspoon of sugar and 2 tablespoons of warm water. Let the yeast sit at room temperature for 20 to 30 minutes, until the mixture has bubbled and expanded. If the bubbles do not appear you might want to think about getting new yeast and start again. / Mélanger levure avec 1 c à thé ou café de sucre et  2 c à soupe d'eau tiède et laisser reposer environ 20 à 30 minutes à température ambiante.  Il doit y avoir des bulbes partout, sinon jeter-le mélange de levure et recommencer cette étape.

2-I used a mixer with a bread hook to make this bread.  Put the flour, semolina, mashed potatoes, yeast mixture and salt in a mixer and knead, adding gradually sugar, butter and milk.  Continue to knead for about 10 minutes.  / J'ai utilisé le robot culinaire pour réaliser ce pain et j'ai mis le crochet pétrisseur. Mélanger farine, semoule, patates, mélange de levure et sel, puis laisser pétrir en ajoutant graduellement le sucre, du lait et beurre.  Continuer à pétrir environ 10 minutes.

3-Cover the dough and allow to sit for 30 minutes./ Couvrir la pâte et laisser reposer pendant 30 minutes.

4-Turn dough out onto the work surface and now use your hands to knead the dough for about 5 minutes. / Transférer la pâte sur un plan de travail et commencer à pétrir avec les mains pendant environ 5 minutes.

5-Take a big bowl and drizzle in a little of oil, then toss the dough in the oil to coat. Cover the bowl with an oiled cling-film/plastic-wrap  and set it in a warm place for at least 4 hours./ Huiler légèrement un grand bol, mettre la pâte dedans et couvrir avec un film alimentaire légèrement huilé. Laisser lever pendant au moins 4 heures.
6-Turn the dough out onto the work surface. Use some white flour to roll it into a rectangle that you know it will fit your loaf pan./ Etaler la pâte sur un plan de travail légèrement fariné puis former un rectangle dont la taille conviendra votre moule de pain.

7-Brush with the egg mixture then sprinkle with sugar, flour and cinamon then roll the dough keeping it tight and contained. / Badigeonner avec le mélange de l'oeuf, saupoudrer de sucre, puis la farine, et finir par la cannelle.  Rouler la pâte sur elle-même en serrant bien le rouleau.

8-Smear loaf pan with some oil, then place the roll in the pan. Cover with an oiled cling-film/plastic-wrap and allow to rise for al least 2 hours./ Huiler légèrement un moule à pain et déposer la pâte dedans. Couvrir avec un film alimentaire légèrement huilé et laisser reposer au moins 2 heures.

9-Let the dough rise for 1 hour then preheat the oven to 200 °C while the dough is rising. / Compter environ 1 heure le moment où vous avez mis la pâte dans le moule pour lever, puis préchauffer le four à 200°C et laisser la pâte lever encore 1 heure ou moins.


10-Bake for 15 minutes on the middle rack in the oven, then tent the pan with aluminum foil and allow to bake for about 40 minutes. / Palcer au milieu du four et laisser cuire pendant 15 minutes, puis couvrir avec du papier aluminium et continuer la cuisson pendant environ 40 minutes.
 
11-Remove from the pan and allow bread to cool. Slice and serve. Enjoy! / Démouler et laisser refroidir puis couper en tranches et servir! Bssa7a w ra7a!

12-While the bread is still warm, brush the crust with some melted butter. / Encore tiède, badigeonner la croûte du pain avec un pinceau trempé dans du beurre fondu.
