My family loves lamb and I have often prepared it this way, especially in Winter. Every few weeks we have them as the meat in our Sunday lunch. They're so easy to cook, and delicious. This recipe is sweet-salty and spicy, all in one. The combination of such flavour and spices is very popular in Morocco. Amazing flavour!
Ingredients :
- 5 lamb chops / 5 côtes d'agneau
-Some fresh coriander and parsley leaves chopped / Quelques feuilles de coriandre et persil fraîches
-2 carrots / 2 carottes
-2 courgettes / 2 courgettes
-2 potatoes / 2 patates
-2 onions / 2 oignons
-2 tablespoons argan oil (you might use olive oil) / 2 c à soupe d'huile d'argane (vous pouvez utiliser l'huile d'olive)
-Some salt / Un peu de sel
-Some freshly milled black pepper / Un peu de poivre noir fraichement moulu
-2 tablespoon honey / 2 c à soupe du miel
- Juice of 1/2 fresh lemon / le jus d'1/2 citron frais
Method / Préparation:
1-Preheat the oven to 200°C / Préchauffer le four à 200°C.
2-Prepare the vegetables / Préparer les légumes:
-Peel and slice the carrots - Cut potatoes into quarters (you might leave the skins on if you wish) - Cut the onions into eighths - Cut courgettes into sticks / Epulcher les carottes et couper les papates en quarters (garder la peau si vous désirez), couper les oignons en quarters - couper les courgettes en batonnets.
3-Place lamb chops in a roasting tray, season them with salt, pepper, then add lemon juice, half of coriander/parsley and oil. / Mettre les côtes d'agneau dans une rôtissoire, assaisoner avec du sel et poivre, ajouter le jus de citron, la moitié de la coriandre/persil et l'huile.
4-Pop them into the oven for about 5 minutes. / Cuire au four pendant environ 5 minutes.
5-Season the vegetables with salt and black pepper, add some oil and coriander/parsley and toss them well round to get them coated. / Assaisoner les légumes avec du sel, poivre, ajouter de l'huile et coriandre/persil et bien mélanger.
6-Arrange the vegetables all around the meat./ Placer les légumes autour des côtes d'agneau.
7-Drizzle honey over the meat and vegetables. / Verser le miel sur la viande et les légumes.
8-Return the baking tray to the oven for a further 20 or 30 minutes or until the meat and vegetables are tender./ Laisser cuire pour 20 à 30 minutes jusqu'à que la viande soit tendre ainsi que les légumes.
9-Serve warm with rice or couscous salad ./ Servir chaud avec du riz ou salade couscous.
