Susan's Pear Bread / Pain aux Poires de Susan

Ever since I saw Susan's recipe on her blog (Susan's Recipe of Pear Buckwheat Bread.),  from the day I saw it, I wanted to try it, and I am thrilled with the way this bread turned out!  Thanks Susan!

Ingrédients:

  Poolish / Levain

- 150 gr white flour / 150 gr de farine blanche

-170 to 180 ml warm water / 170 à 180 ml d'eau tiède

-Pinch of dried yeast  (about 2 gr ) / Une pincée de levure boulangère sèche (environ 2 gr)

Prepare the poolish / Préparer le levain:

Mix yeast and water, then add flour and mix well with your hands. Let it rest for about 20 hours at room temperature / Diluer la levure dans l'eau, puis ajouter la farine tout en remuant avec la main. Verser la pâte dans un un contenant, couvrir et laisser lever pendant 20 heures à température ambiante.

Ingrédients : Bread / Pain:

-300 gr white flour / 300 gr de farine blanche

- 200 gr fine semolina / 200 gr de semoule très fine

-Warm water enough to form a smooth and elastic dough / De l'eau tiède assez pour former une pâte lisse et souple.

-4 gr dried yeast / 4 gr de levure boulangère sèche

-Some salt / Un peu de sel

-Poolish / Levain

-50 gr pear compote / 50 gr de compote de poires

-2 tablespoons olive oil / 2 c à soupe de l'huile d'olive

-1 tablespoon caster sugar / 1 c à soupe de sucre semoule

-2 tablespoons sesame seeds, toasted   / 2 c à soupe graines de sésame grillées

-3 tablespoons grated coconut / 3 c à soupe de noix de coco rapée.

Method / Préparation:

1-Prepare the poolish / Préparer le levain.

2-I used a mixer with a bread hook to make this bread.  Put the flour, semolina, yeast, sugar, oil, salt and poolish in a mixer and knead for about 5 minutes, adding gradually water.  / J'ai utilisé le robot culinaire pour réaliser ce pain et j'ai mis le crochet pétrisseur. Mélanger farine, semoule, levure, sel, huile, sucre et levain, puis laisser pétrir pendant environ 5 minute, en ajoutant graduellement de l'eau.

3-Add  sesame seeds and coconut , then continue to knead for at least 10 minutes. Mix well to a soft, smooth and elastic dough (if hard and cracking add some water).  Add pear compote and mix for just a minute until the fruit is evenly distributed / Ajouter noix de coco et graines de sésame. Pétrir au moins 10 minutes jusqu'à que la pâte soit souple et élastique. Verser graduellement de l'eau si necessaire.  Ajouter compote de poires et continuer à pétrir pour seulement une minute, juste assez pour bien répartir ce fruit dans la pâte.

4-Place in a large bowl, cover with plastic wrap or a damp tea towel and let rise for about 4 hours. / Placer  la pâte dans un grand bol, couvrir avec un film alimentaire ou d'un torchon humide de préférence. Laisser lever pendant 4 heures.

5-Shape into a pear . / Façonner en forme de poire

6- Form a ball with the dough. / Former une boule.

7-Flatten into a circle / Aplater légèrment pour former un rond.

8-Join the 2 sides to form a triangle. / Rejoindre les 2 côté pour former un triangle.
9-Turn the dough over so the smooth side is up. Cover and let rise for 1 1/2 - 2 hours or until the indentation left by a fingertip springs back very slowly. / Tourner la pâte , pour avoir le côté lisse en haut. Couvrir et laisser pousser pendant 1 1/2 - 2 heures ou jusqu'à ce que l'empreinte d'un doigt sur la pâte reste visible.
10-Preheat the oven to 250°C. Finish decorating the bread. / Préchauffer le four à 250°C. Finir décorer en poire.


11-Sprinkle some flour over the bread.  / Saupoudrer d'un peu de farine.

12-Make slashes. / Faire des incisions.

13-Reduce the heat to about  230°C .  Bake for about 45 minutes to 1 hour or until golden brown. Leave the oven door open during the latter 15 or 20 minutes of the baking time. / Baisser la température à 230°C degrés . Laisser cuire entre 45 à 1 heure ou jusqu'à qu'il soit bien doré. Laisser cuire dans le four, porte entre-ouverte, pour les dernières 15 ou 20 minutes de la cuisson.



14-Remove to a rack and let cool / Placer sur une grille et laisser refroidir.

Look at all the crusty goodness here, and I'll wager it's soft and slightly sweet on the inside. Oh my, how I wish I had a nice thick slice of this. YUM YUM YUM!!!!
