قطبان الدّْجاجْ كْفْتَة/Moroccan Chicken Kebab / Brochettes au poulet à la marocaine


I think it is great mincing your own meat and chicken, and even make your own sausages. Having over the years being quite dissatisfied with commercially produced mince, I decided to buy a mincer, I bought a small manual one.  Easy to use, never breaks and finally I can mince meat myself.  Once you taste home-made minced meat, you  will never feel the need to purchase commercially produced minced meat again.  As for what meat, I just get what is on special and at least I'm sure there is no added fat in it. These flavourful kebab can be made with any type of meat either chicken or turkey breast, lamb, beef etc....

Ingredients:

 - 500 gr chicken breast, cut into thin strips or cubes / 500 gr de poitrine de poulet, coupée en filet fin ou en cubes

- Some salt / Un peu de sel

- 2 teaspoons red paprika / 2 c à thé de paprika rouge

- 1/2 teaspoon ground black pepper / 1/2 c à thé poivre noir moulu

- 1/2 teaspoon ground ginger / 1/2 c à thé de gingembre moulu

- 1/4 teaspoon curcuma or turmeric / 1/4 c à thé de curcuma

-3 cloves garlic / 3 gousses d'ail

-Some fresh coriander and parsley leaves / Quelques feuilles de coriandre et persil fraîches

- 1 tablespoon fresh lemon juice / 1 c à soupe jus de citron frais

-1 1/2 tablespoons olive oil / 1 1/2 c à soupe d'huile d'olive

Method / Préparation:

1- Mince the meat with all the ingredients except lemon juice, salt and oil.  /  Hacher la viande avec tous les ingrédients à l'exception du jus de citron, l'huile et sel.
2-Add lemon, salt and olive oil.  Mix well and cover.  Marinate the meat in the fridge several hours or overnight for best results. / Ajouter, jus de citron, sel et l'huile d'olive et bien mélanger.  Couvrir et laisser mariner pour des heures ou toute une nuit. Garder au réfrigérateur.

3-Grill and make sure to brush while they are cooking with some olive oil and lemon juice / Faire griller et les badigeonner de temps en temps avec un peu de mélange de l'huile d'olive et jus de citron.

i always wanted to buy a mincer. mincing the meat manually is a pain to me. your chicken kebab looks delicious. wish i can have a bite =)
