كويرات شكلاط وْ أملو/Chocolate-Amlou Balls/ Boules Au Chocolat et Amlou!


Chocolate truffles are such a rare treat that put a smile on anyone's face with their beautiful rich, delicate and smooth texture. I used a good quality dark chocolate in this recipe because I love its rich, bitter flavor.  I also added some Amlou because I LOVE the combo of chocolate and almonds!!! I do this whenever I am making anything with chocolate!  Hope you enjoy!

Here is the recipe / Voici la recette:
Makes 24 medium truffles / Pour 24 truffes moyennes

Ingredients:

-200 ml double cream, also called "country style cream" (which is about 48%) or use heavy cream (between 36 and 40%)  / 200 ml de crème entre 35 à 48%

-250 gr dark chocolate, chopped / 200 gr chocolat noir, haché grossièrement

-1 tablespoon unsalted soft butter / 1 c à soupe de beurre mou non-salé

-4 tablespoons Amlou / 4 c à soupe d'Amlou

-4 tablespoons mint tea / 4 c à soupe de thé à la menthe

-Some cocoa powder for dusting / Un peu de cacao en poudre pour rouler les truffes.

-Some Blanched Almonds to decorate / Quelques Amandes  Blanchies pour décorer


Method / Préparation:

1-Bring the cream to the boil./ Amener la crème à ébullition.

2-Remove from the heat and add chocolate. Let the chocolate stand in hot cream 3 to 5 minutes to soften, then whisk chocolate together with the cream until melted./ Retirer du feu puis ajouter le chocolat et laisser quelques minutes au chocolat pour qu’il prenne la température de la crème (entre 3 à 5 minutes). Puis À l’aide d’un fouet, émulsionner la crème et le chocolat pour obtenir une préparation homogène.

3-Stir in the butter until melted./ Ajouter le beurre et bien mélanger jusqu' à ce qu'il fonde.

4-Stir in the mint tea and Amlou./ Ajouter le thé à la menthe et Amlou puis mélanger le tout.

5-Strain into a bowl./ Dans un saladier, tamiser le mélange de chocolat.

6-Let cool at room temperature./ Laisser refroidir à température ambiante.

7-Cover and chill for overnight./ Placer au frais toute une nuit.

8-Using a small ice cream scoop, scrape the mixture into 24 medium balls.  Place on a baking parchment./ Pour que les boulettes de chocolat soient bien toutes de la même grosseur, utiliser une cuillère à crème glacée, puis plonger la cuillère dans la pâte au chocolat et déposer les boules sur du papier parchemin ou papier cuisson.

N.B. Dip the scoop in cold water from time to time to prevent from sticking./ Tremper la cuillère à crème glacée dans l'eau froide de temps en temps pour éviter au chocolat de coller au fond.
9-If necessary, lightly coat your hands in sunflower oil, then roll the truffles between your palms to give them that roll shape. / Si nécessaire, enduire légèrement  vos main avec l'huile tournesol et faites rouler les truffes pour leur donner une belle forme ronde.

10-Roll the truffles in the cocoa powder until evenly coated.  Dust your hands with cocoa to prevent the truffles from sticking. / Roulez les truffles dans le cacao et enrober-les uniformément. Passer un peu de poudre de cacao entre vos mains pour faciliter la tâche.
11-Place an almond in the centre of each truffle./ Placer une amande au centre.

12-Keep in the refrigerator until ready to serve. You can freeze them up to 2 months if you wish. / Gardez au frais jusqu'au moment de déguster. Vous pouvez les congeler jusqu'à 2 mois si vous voulez.

This is absulutely amazing! I have been in Morocco for three weeks now and it is great to see that you also share a love of their incredible food, like me. I spent some time in a Riad called Riad Magellan, a charming little abode in the heart of Marrakech, they offer cooking lessons there so if you want to learn in the country, its a great way to do so :)
