حَرْشَة / مْبَسّسْ / Moroccan Harsha (Harcha) or Mbessess /Harcha ou Mbessess Marocaine

Harcha (   Harsha or 7archa) or Mbessess is a Moroccan crepe made from a mixture of fine and medium semolina flour or fine semolina, and other ingredients are added as butter, oil, yeast, salt, warm water to form a wet dough.  However, the modern version of harsha use baking powder and milk or buttermilk or even fresh cream or sour cream etc... whereas the original version contains yeast, warm water, salt, oil and sometimes butter. Harsha dough is a no-knead batter. The dough shouldn't be handled overly much.  All ingredients are mixed up and allowed to rest for about 30 minutes or less.  The dough will not rise during this rest period but it allows the dough to absorb all the liquid.  When the dough is less runny, it's cut into small balls then flattened and cooked, over a low heat.  To cook harsha, a Oujda pan ( Ma9la dyal Wajda) is used but you might use Tagine or a heavy non-stick frying pan or a skillet or even a griddle.  The low heat allows both the top and

شلادة اللّوبية/Moroccan Cold Green Beans (String Beans) Salad or Moroccan Flag Salad/ Salade d'Haricots Verts à la Marocaine ou Salde Drapeau Marocain

After a few months of gloomy weather, finally the sun shined, showing its bright face, there was not one single fog and it was our spring break week too. So Spring is here and I wanted to prepare something to remind me of that feeling of renewed life and unsurprisingly the colour green, green beans and Moroccan flag salad came to my mind. This is a salad which is.good to make any time and tastes great! Red onions and peppers are chosen to be used only for brightness contrast and greater colour combination, but you might also use green pepper or white onion if you wish.  Sometimes, I add roasted cherry tomatoes to the salad but not this time, since I've tried to stay faithful to the original and traditional recipe in this post. So here is the recipe. Amlou Chocolate Ganache or Filling / Ganache au Chocolat à base d'Amlou

Ingredients : - 100 gr dark unsweetened chocolate / 100 gr chocolat noir non-sucré - 50 gr can sweetened condensed milk / 50 gr de lait concentré sucré - 4 tablespoons  Amlou  / 4 c à soupe d' Amlou  How to make Amlou Paste and What is Amlou Paste? Comment préparer Amlou et c'est quoi Amlou Method / Préparation: 1 -Combine chocolate, and sweetened condensed milk in a microwave safe bowl. Heat mixture in a microwave, stirring every 10 seconds or until the chocolate is melted. Very important to stir every 10 seconds to avoid burning the chocolate. / Utiliser un bol qui va au micro-onde.  Verser le lait concentré et ajouter le chocolat dans le bol, puis placer au micro-onde en remuant chaque 10 secondes (Bien important de le faire par cession de 10 secondes et en remuant entre chaque cession afin de ne pas faire brûler le chocolat). Lime and kiwifruit Juice / Jus de Limes et Kiwis

Summer comes early this year and what a week!  When hot weather rolls around, nothing quite quenches your thirst like a cold fresh fruit! Ingredients : - 3 fresh-squeezed lime juice / Jus de 3 limes frais - 3 kiwifruit, peeled and cut into small pieces / 3 kiwis, pelés et coupés en petits morceaux - About 200 ml  +/- orange juice (Add more if necessary to get your desired consistency) / Environ 200 ml (plus ou moins) jus d'orange (Ajouter plus pour obtenir la consistance de jus désirée) - 4 ice cubes / 4 cubes glacés - 1 teaspoon honey , or add more honey or sugar if your wish   / 1 c à thé ou café de miel, ou ajouter plus du miel ou de sucre si vous aimez les jus sucrés - Lime slices, garnish / Quelques rondelles de lime pour décorer Method / Préparation: 1- Squeeze juice out of lime and set aside ./ Extraire le jus des limes et réserver. 2- In a blender, combine kiwifruit, lime juice, orange juice, then whirl until mixture is well blended. / Mixer

زعلوك ديال خيزّو/Moroccan Carrots Zaalouk or Za3louk / Zaâlouk ou Za3louk Marocain aux Carottes

How many carrots can you eat before you turn orange?  We eat this carrot salad almost 3 times a week and our skin colour hasn't yet changed, or may be we haven't yet eaten enough to turn our skin orange! Smiles. This is an other traditional Moroccan side dish-salad, usually served with fried fish or fish Tajines and of course with some nice bread.  It can also be served as spicy dip that can be seen accompanying a main dish seafood or grilled steak or grilled chicken or all sort of brochettes or Kabab. It is always better to eat the carrots raw to get the complete nutrition but sometimes you might want to eat them cooked and if you do, here is a recipe for you that I learnt from my mother.  A divine combination! Roasted tomatoes and garlic add a rich, wonderful smoky flavour to this salad and complement the use of Moroccan traditional spices in this simple dish.  If you prefer salads which are not too spicy, you could omit the hot pepper and Soudaniya. This post will be about one of my childhood memories!  Each time we sit down at the table to eat, it seems as though, it's not ME but it's my MOTHER (passed away many years ago), who is serving us one of her mouth-watering lunch or dinner. The reason I feel that way is that I cook so many of the same dishes and recipes that my mother used to make.  All her old traditional recipes that she learned from my grandmother and that my grandmother learned from her mother etc....  Same dishes, same mum and grand-mum styled-home-cooked food, same taste and aroma!  I can't let go all these food childhood memories and how could I?
