شلادة الكورجيت/Moroccan Zucchini Salad /Cooked Moroccan Salad of Courgettes/Salade aux courgettes ou zucchini à la marocaine

I absolutely love zucchini or courgettes and I use them quite a lot in my cooking.  The fresh lemon juice, preserved lemon and cumin really brought out the great herbs and garlic flavours in this one tasty salad, but at the same time, nothing overpowered the simple taste of the zucchini.  So refreshing!  It is just as flavourful as it is colourful and of course it's highly nutritious.  This salad is easy to make and you may serve it warm or cold.  It goes particularly well with fish or brochettes or steaks!  And if you like cheese, sprinkle the salad with either blue or feta or goat cheese before your serve it. شلادة خيزّو/Moroccan Carrot Salad / Salade de Carottes à la Marocaine

In Morocco, we serve salads like this all the time and this is another salad that appeals to all senses, spicy and warm, feeds the eyes and soul, with Moroccan overtones: cumin, fresh coriander, fresh parsley, preserved and fresh lemon, olive oil, black olives etc...  It is easy to make and simply delicious with the subtle tang from the preserved and fresh lemon, zest of fresh lemon, mixed with cumin and garlic flavour, all interlaced around sweet carrots!  So delicious! You can prepare this salad in advance and serve it warm or cold.  It goes perfectly well with Brochettes, Tajines or Tagines, Steaks, Fish, Seafood etc......  However, if you don't like spices or you've never tasted them before, go slowly with this recipe and use just a pinch of the ingredients, especially those that sound new to you and add more of your own herbs that you like most, according to your own taste.  If you don't like coriander, use only parsley, though this will change the taste consider

Garlic Creamy Mashed Potatoes / Purée De Patates (Pommes de terre) à la Crème et à l'Ail

If your children are like mine, then they love mashed potatoes. However, I try not making them so often, only once every week, serving them with roasted salmon or lamb. One would think that mashed potatoes are too easy to make and does not require a recipe, but I think with a slight addition of spices, herbs and garlic, makes a huge difference between a flavourful home-made mashed potatoes and a bland, runny store-bought or instant mashed potatoes. I love posting cakes, especially Meskouta , because they help me remember those special moments I shared with my family, and it is more fun when I read the posts with my sons.  "You have to make this cake every week from now on Mama ", Kamal ordered me, with his mouth full.  He loves  hazelnuts and almonds nearly as much as he loves chocolate, he can eat them everyday, never have enough of them just like his Mama. Italian Oven-Dried Tomatoes Recipe / Recette Tomates Séchées Au Four à l'Italienne

It was a sunny and lazy Sunday, my husband and my boys went to a movie. I was in that mood to try something new, and since I had a recipe that I wanted to try a long time ago, but somehow never got around to it, but that day, I decided to go for it.  I made Oven-Dried Tomatoes! Dried-Tomatoes are born in Italy as a way to store tomatoes for the winter.  They are an easy way to use your excess tomatoes in your garden, and they add a gourmet touch to so many dishes. Unfortunately their price in the stores is so exorbitant and our cooking may get very expensive if we use dried tomatoes so often. I wish I could make Sun-Dried Tomatoes but I don't live in a climate that makes that the best method, so I dried mine in the oven.  This is a recipe passed to me by my colleague and friend Lori, except for my addition of ground black pepper, cumin and dried coriander. Recipe, a dapted from  Mary Berry's recipes " Dessert " Mary Berry is one of the UK's best known and one of the most respected cookery writers in the country. الرُّوزْ بْمَطيشة/Rouz Matticha / Moroccan Style Cooked Rice with Tomato Sauce / Riz Cuit dans une Sauce Tomates à la Marocaine!

"Rouz Maticha", phonetically, pronounced as :   /ruːz mætiːsha/  (ROOZ MATISHA), which means "Rice and Tomato" in Moroccan language, is one of my favourite dishes from my mother when I was young.  In Morocco, rice is traditionally served with a tomato sauce, especially for supper meals. Since my family and I like spicy taste, I always use the same sauce tomate with Rice, with  Pasta and Lasagna  as well.  A tasty-spicy tomato sauce, perfect flavour and I seriously crave this sauce all the time. It's so good.  Once you try it, you may begin adding it to anything and everything that you eat! Mamatkamal For 3 to 4 servings / Pour 3 à 4 personnes Ingredients : - 300 gr de riz basmati / 300 gr de riz basmati - About 600 gr or 450 ml of b oiling water.  The proportions are generally two to one: 100 gr of rice to 200 gr of water.  You may sometimes need to add more water, it depends on the type of basmati you choose for this recipe. / Environ 450

Moroccan-Style Tomato Sauce served with pasta/Pâtes au Maroc

Who doesn't love pasta! It comes in lots of shapes and styles and I prefer to buy most of the time fresh pasta, only if the price is reasonable.  It is the perfect meal for everyone and my children love it, they can eat it every day.  If only the cost of fresh pasta was not an issue, I would probably cook it for all weeknight, and all family occasions! J'aime les pâtes mais j'achète souvent, si c'est possible, les pâtes fraîches car je trouve qu'elle sont plus goûteuses et bien adaptées à la préparation de toutes sortes de sauces.  Je reçois souvent très simplement, avec des pâtes, une bonne salade marocaine et une belle entrée comme Briwates marocaines aux légumes ou fruits de mer. Je trouve que les pâtes si elles sont bien mijotées, et bien serives dans une belle assiette, avec une bonne sauce fine et chaude déposée au milieu, ce plat de pâtes donc mérite toute notre attention et surtout notre amour!
